Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir them together to evenly distribute the leavening and spices.
- Whisk Wet Ingredients: In a separate bowl, whisk together the eggs, milk, honey or maple syrup, and vanilla extract until the mixture is smooth and well blended.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients bowl and gently stir until just combined. Be careful not to overmix to keep the squares tender.
- Fold in Add-ins: Carefully fold in the fresh or frozen berries and, if using, the chopped nuts or seeds to add texture and flavor.
- Transfer to Baking Dish: Pour the batter into the prepared baking dish and smooth the top with a spatula to create an even layer.
- Bake: Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the baked oatmeal to cool completely in the dish before slicing into 9 squares. This helps the squares set and makes them easier to handle.
