Description

These irresistibly fluffy French Toast Muffins are a delightful twist on classic French toast, combining the comfort of bread soaked in a sweet, spiced custard with the convenience of muffin-sized servings. Perfect for breakfast or brunch, they offer a soft, custardy interior with a lightly crisp exterior, enhanced by warm cinnamon and nutmeg flavors.

Ingredients

Scale

French Toast Base

  • 10 slices day-old bread (white, brioche, or challah), cubed
  • 5 large eggs
  • 1 cup milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt

Topping

  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter, melted

Instructions

  1. Prepare the custard mixture: In a large mixing bowl, whisk together the eggs, milk, heavy cream, ½ cup granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt until fully combined and smooth.
  2. Soak the bread: Add the cubed day-old bread slices to the custard mixture, gently folding them in to ensure all pieces are well coated. Let the mixture rest for a few minutes to allow the bread to absorb the custard fully.
  3. Mix topping ingredients: In a small bowl, combine ¼ cup granulated sugar and 1 teaspoon ground cinnamon. This will be used later to coat the muffins after baking.
  4. Prepare muffin pan: Preheat your oven to 350°F (175°C). Grease a standard muffin tin or line with paper liners to prevent sticking.
  5. Fill the muffin tins: Using a spoon, transfer the soaked bread mixture evenly into each muffin cup, pressing down gently to compact the bread and custard mixture.
  6. Bake the muffins: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the muffins are set in the center and lightly golden on top.
  7. Apply topping: Remove the muffins from the oven and brush each muffin with melted butter, then sprinkle the cinnamon sugar mixture over the top for a sweet, crunchy finish.
  8. Cool and serve: Allow the muffins to cool slightly in the pan before removing. Serve warm for the best fluffiness and flavor.

Notes

  • Using day-old bread helps the cubes soak up the custard better without falling apart.
  • Brioche or challah breads add extra richness and flavor due to their natural sweetness.
  • This recipe can be doubled or tripled to serve a larger crowd.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days, and reheat in the oven or microwave before serving.
  • For a dairy-free version, substitute milk and heavy cream with almond milk or coconut cream.
