For the Smashburger Patties
- 1 lb ground beef (80/20 blend for juiciness)
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
For the Quesadillas
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup diced onions
- 1/4 cup sliced pickles
- 1/4 cup diced tomatoes
- 2 tbsp unsalted butter, melted
For Serving (Optional)
- Lettuce leaves for garnish
- Ketchup
- Mustard
Instructions
- Mix the beef: In a large mixing bowl, combine the ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined without overworking the meat.
- Preheat cookware: Preheat your grill or a large skillet over medium-high heat for optimal cooking temperature.
- Form patties: Divide the beef mixture into 8 equal parts and shape each into a ball.
- Cook patties: Brush the grill or skillet with olive oil. Place each ball on the hot surface and use a spatula to press them into flat patties. Cook for 2-3 minutes until the bottom is crispy, then flip and cook until patties reach desired doneness.
- Set patties aside: Remove the cooked patties and place them on a plate to rest.
- Prepare tortillas: Reduce heat to medium. Brush one side of each flour tortilla with melted butter.
- Assemble quesadilla: Place a tortilla butter side down on the grill or skillet. On one half, layer a mix of cheddar and Monterey Jack cheese, add 2 beef patties, then top with diced onions, pickles, and tomatoes. Finish with more cheese on top.
- Fold and cook quesadilla: Fold the tortilla in half over the filling to enclose it.
- Grill quesadilla: Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is fully melted.
- Repeat with remaining ingredients: Continue assembling and grilling the remaining quesadillas using the leftover tortillas and fillings.
- Serve and garnish: Slice the quesadillas into wedges and serve warm with optional lettuce leaves, ketchup, and mustard on the side.
Notes
- Use an 80/20 ground beef blend for juicy, flavorful patties.
- Do not overmix the beef to keep patties tender.
- Butter side of the tortilla should always be placed down on the heat for a crispy, golden finish.
- Feel free to customize toppings with your favorite burger fixings.
- For ease, a large skillet works great if a grill is not available.
- Allow patties to rest briefly after cooking to retain juices.
