Description

This Lazy Girl’s Snickers Ice Cream Cake is a no-bake, layered dessert featuring frozen pound cake, rich chocolate and vanilla ice creams, caramel sauce, hot fudge, and salted peanuts. Perfect for a quick yet indulgent treat, it requires minimal prep and plenty of time to freeze until set, delivering a creamy, crunchy Snickers-inspired delight.

Ingredients

Scale

Main Ingredients

  • 10.75 ounces frozen pound cake (304 grams, 1 package)
  • 25 ounces chocolate ice cream, softened (709 grams, about ⅘ quart / 1½ pints)
  • ¼ cup caramel sauce (80 grams)
  • 1 cup salted peanuts, divided (142 grams)
  • 25 ounces vanilla ice cream, softened (709 grams, about ⅘ quart / 1½ pints)
  • ¼ cup hot fudge (80 grams)

Instructions

  1. Prepare the Pound Cake Layers: Cut the frozen pound cake lengthwise horizontally into three layers. Reserve the top layer for another use, such as topping with strawberries and whipped cream.
  2. Line the Pan: Line a loaf pan with plastic wrap to ease removal and layering.
  3. First Layer of Cake and Chocolate Ice Cream: Place one pound cake layer at the bottom of the lined loaf pan. Spread the slightly softened chocolate ice cream evenly over the cake, smoothing it with a spatula.
  4. Add Caramel Sauce: Pour the caramel sauce over the chocolate ice cream, leaving a small rim around the edges to prevent dripping.
  5. Add Peanuts: Sprinkle half of the salted peanuts evenly over the caramel layer.
  6. Add Second Cake Layer: Place the second piece of pound cake over the caramel and peanuts. Note that it may not reach the edges of the ice cream layer.
  7. Layer Vanilla Ice Cream: Spread the softened vanilla ice cream over the pound cake, smoothing with a spatula to create a level surface.
  8. Top with Hot Fudge and Peanuts: Drizzle the hot fudge over the vanilla ice cream and sprinkle the remaining peanuts on top.
  9. Freeze: Cover the cake with plastic wrap and place it in the freezer for at least 8 hours to fully set before serving.

Notes

  • Use frozen pound cake to ensure clean slices and proper layering.
  • Softening the ice creams makes them easier to spread but avoid melting.
  • Line the pan well with plastic wrap for easy removal of the cake.
  • For an extra touch, use the reserved pound cake top to create a secondary dessert by topping it with fresh strawberries and whipped cream.
  • Allow at least 8 hours freezing time for best texture and layering.
