Description

Le Crookie is a delightful fusion of flaky puff pastry and rich chocolate chip cookie dough, offering the best of both worlds in a single dessert. This French-American treat features buttery layers wrapped around gooey chocolate chip filling, making it a perfect indulgence for any occasion.

Ingredients

Scale

Puff Pastry

  • 1 sheet of store-bought all-butter puff pastry, thawed

Cookie Dough

  • 1 cup semi-sweet chocolate chips
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup chopped walnuts (optional)

Egg Wash

  • 1 egg for egg wash

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
  2. Make the Cookie Dough: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. Beat in the egg and vanilla extract until fully combined.
  3. Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, stirring continuously until a dough forms. Fold in the chocolate chips and, if desired, the chopped walnuts.
  4. Prepare Puff Pastry: On a lightly floured surface, unfold the thawed puff pastry sheet. Cut it into squares or rectangles, according to your preferred size.
  5. Assemble Crookies: Place a scoop of the prepared cookie dough onto the center of each puff pastry square. Gently fold the corners of the puff pastry over the cookie dough, leaving the center slightly open to expose some filling.
  6. Apply Egg Wash: Brush the exposed puff pastry edges with beaten egg wash to achieve a golden, glossy finish upon baking.
  7. Bake: Transfer the assembled crookies to the lined baking sheet. Bake for 15 to 18 minutes, or until the pastry is golden and puffed, and the cookie center is set but still soft.
  8. Cool and Serve: Remove from the oven and let the crookies cool slightly before serving to allow the filling to set and to enhance flavors.

Notes

  • For best results, use cold puff pastry to ensure optimal flakiness.
  • Chill the assembled crookies for 10 to 15 minutes before baking to maintain their shape during baking.
  • Extra cookie dough can be frozen for future use, making preparation quicker next time.
