- 1½ lbs ground beef (80/20)
- ½ cup breadcrumbs
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 1 egg
- ¼ cup milk
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
For the mashed potatoes:
- 2 lbs russet or Yukon gold potatoes (peeled and cubed)
- ½ cup milk (warm)
- 4 tbsp butter
- salt and pepper to taste
For the topping:
- 1½ cups shredded cheddar cheese
- 2 tbsp chopped parsley (optional)
Instructions
- Preheat oven to 375°F (190°C). In a large mixing bowl, combine all meatloaf ingredients and mix until just combined.
- Transfer the mixture to a greased loaf pan and bake for 40–45 minutes.
- Boil the potatoes until tender, then mash with milk, butter, salt, and pepper.
- Spread the mashed potatoes over the meatloaf, top with cheddar cheese, and bake for 10 minutes.
- Let rest before slicing and garnish with parsley.

- For a shortcut, use store-bought mashed potatoes.
- Add sautéed mushrooms or cooked bacon under the mashed potatoes for extra flavor.
