For the meatloaf:

  • lbs ground beef (80/20)
  • ½ cup breadcrumbs
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 egg
  • ¼ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper

For the mashed potatoes:

  • 2 lbs russet or Yukon gold potatoes (peeled and cubed)
  • ½ cup milk (warm)
  • 4 tbsp butter
  • salt and pepper to taste

For the topping:

  • 1½ cups shredded cheddar cheese
  • 2 tbsp chopped parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C). In a large mixing bowl, combine all meatloaf ingredients and mix until just combined.
  2. Transfer the mixture to a greased loaf pan and bake for 40–45 minutes.
  3. Boil the potatoes until tender, then mash with milk, butter, salt, and pepper.
  4. Spread the mashed potatoes over the meatloaf, top with cheddar cheese, and bake for 10 minutes.
  5. Let rest before slicing and garnish with parsley.

Notes

  • For a shortcut, use store-bought mashed potatoes.
  • Add sautéed mushrooms or cooked bacon under the mashed potatoes for extra flavor.
