Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Sauce:

  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon

Additional:

  • 1 (14 oz) can artichoke hearts, drained and halved
  • 1/2 cup pitted Kalamata olives
  • 1/4 cup chopped fresh parsley

Instructions

  1. Season the chicken: Season the chicken breasts with salt and pepper.
  2. Cook the chicken: Sear the chicken in olive oil until golden and cooked through. Set aside.
  3. Make the sauce: In the same skillet, cook garlic, oregano, and red pepper flakes. Deglaze with wine or broth, then add lemon juice and zest.
