- 1 pound ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
Toppings
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped red onion
- 1 jalapeño, sliced

Instructions
- Preheat and Bake Tots: Preheat your oven to 425°F (220°C). Spread the frozen tater tots in a single layer on a baking sheet, spray lightly with olive oil, and bake for 25 to 30 minutes until crispy and golden brown.
- Cook the Beef: While the tots are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces. Drain any excess fat, then stir in the taco seasoning mix and 1/2 cup water. Let it simmer for about 5 minutes until the sauce thickens.
- Assemble Totchos: Once the tater tots are done, remove them from the oven and reduce the oven temperature to 375°F (190°C). Spread the taco-seasoned beef evenly over the tots, followed by black beans, then sprinkle the cheddar and Monterey Jack cheeses over the top.
- Melt the Cheese: Return the baking sheet to the oven for 5 to 7 minutes or until the cheese has melted and is bubbly.
- Add Fresh Toppings and Serve: Remove from the oven and immediately sprinkle with diced tomatoes, sliced black olives, chopped red onion, jalapeño slices, and fresh cilantro. Drizzle with sour cream and add salsa or pico de gallo either on top or on the side. Serve hot and enjoy.
