Scale
Main Ingredients
- 1 lb ground beef (or turkey)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup finely chopped onion
- 1/4 cup ketchup (plus more for topping)
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- Salt & pepper to taste
Optional Toppings
- Shredded cheese
- BBQ sauce
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin to prevent sticking.
- Mix Ingredients: In a large bowl, combine the ground meat, breadcrumbs, milk, egg, finely chopped onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until everything is just combined, being careful not to overwork the meat mixture to keep the muffins tender.
- Fill Muffin Tin: Evenly divide the meat mixture into the prepared muffin tin cups. Press the mixture gently into each cup to form individual mini meatloaf portions.
- Add Toppings: Spoon a small amount of ketchup on top of each muffin. Alternatively, you can add BBQ sauce or sprinkle shredded cheese as preferred.
- Bake: Bake in the preheated oven for 20 to 25 minutes. The meatloaf muffins are done when the internal temperature reaches 160°F (71°C), ensuring they are safely cooked through.
- Rest and Serve: Remove the meatloaf muffins from the oven and let them rest for 5 minutes before serving. This allows juices to redistribute, keeping them moist and flavorful.
Notes
- Use lean ground beef or ground turkey for a healthier option.
- Do not overmix the meat mixture to avoid dense muffins.
- Check the internal temperature with a meat thermometer to ensure doneness.
- Customize toppings with your favorite sauces or cheese variations.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
