Description

These No Bake Cornflake Cookies are a quick and easy treat combining crunchy cornflakes with a sweet, peanut buttery syrup. Perfect for when you want a delicious cookie without turning on the oven. Crispy, sweet, and satisfyingly nutty, these cookies come together in just minutes and set without baking.

Ingredients

Scale

Dry Ingredients

  • 3 cups Corn Flakes
  • 1/2 cup white granulated sugar

Wet Ingredients

  • 1/2 cup light corn syrup
  • 2 tablespoons butter
  • 1/2 cup creamy peanut butter

Instructions

  1. Heat the syrup mixture: Combine sugar, corn syrup, and butter in a small saucepan. Melt together over medium-low heat until the sugar fully dissolves, making sure not to let the mixture boil.
  2. Add peanut butter: Remove the pan from heat and stir in the creamy peanut butter until the mixture is smooth and well combined.
  3. Mix with cornflakes: Pour the peanut butter syrup over the cornflakes. Gently stir to coat the cornflakes evenly, being careful not to crush them.
  4. Form cookies: Line a cookie sheet or counter with parchment paper. Using a 1.5 to 2 tablespoon cookie scoop, scoop out mixture and form into cookie balls.
  5. Set the cookies: Place the cookie balls on the parchment paper and allow them to cool completely and set before serving.

Notes

  • Do not boil the sugar mixture to avoid grainy texture.
  • For extra flavor, add a pinch of salt or vanilla extract to the peanut butter mixture if desired.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • For a nut-free option, substitute peanut butter with sunflower seed butter.
