Ingredients
Scale
Dry Ingredients
- 3 cups Corn Flakes
- 1/2 cup white granulated sugar
Wet Ingredients
- 1/2 cup light corn syrup
- 2 tablespoons butter
- 1/2 cup creamy peanut butter
Instructions
- Heat the syrup mixture: Combine sugar, corn syrup, and butter in a small saucepan. Melt together over medium-low heat until the sugar fully dissolves, making sure not to let the mixture boil.
- Add peanut butter: Remove the pan from heat and stir in the creamy peanut butter until the mixture is smooth and well combined.
- Mix with cornflakes: Pour the peanut butter syrup over the cornflakes. Gently stir to coat the cornflakes evenly, being careful not to crush them.
- Form cookies: Line a cookie sheet or counter with parchment paper. Using a 1.5 to 2 tablespoon cookie scoop, scoop out mixture and form into cookie balls.
- Set the cookies: Place the cookie balls on the parchment paper and allow them to cool completely and set before serving.
Notes
- Do not boil the sugar mixture to avoid grainy texture.
- For extra flavor, add a pinch of salt or vanilla extract to the peanut butter mixture if desired.
- Store cookies in an airtight container at room temperature for up to 5 days.
- For a nut-free option, substitute peanut butter with sunflower seed butter.
