Ingredients
Scale
Base
- 1 1/2 cups digestive biscuits (or any plain biscuits), crushed
- 1/4 cup unsalted butter, melted
- 2 tbsp sugar (optional)
Filling
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 2 Earl Grey tea bags (or 2 tbsp loose leaf Earl Grey tea)
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
Chocolate Topping
- 3/4 cup dark chocolate chips (or chopped dark chocolate)
- 2 tbsp coconut oil or butter
Instructions
- Prepare the Base: In a bowl, combine the crushed digestive biscuits and sugar if using. Add the melted butter and mix until the mixture is well combined and the crumbs are evenly coated.
- Press the Base into the Pan: Line an 8×8-inch square or rectangular pan with parchment paper. Press the biscuit mixture firmly into the base of the pan to form an even layer. Chill the pan in the fridge while you prepare the filling.
- Infuse the Tea into the Cream: In a small saucepan, heat the heavy cream over low heat. Add the Earl Grey tea bags or loose tea. Let it steep for 5-7 minutes, stirring occasionally. Remove the tea bags or strain out the loose tea and let the cream cool slightly.
- Make the Mousse Filling: In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
- Combine the Tea-Infused Cream with the Cream Cheese: Slowly add the tea-infused cream to the cream cheese mixture, beating until fully incorporated and smooth.
- Assemble the Slice: Spoon the Earl Grey-infused cream mixture over the chilled biscuit base and smooth the top with a spatula.
- Make the Chocolate Topping: In a small saucepan or microwave, melt the dark chocolate chips and coconut oil or butter together, stirring until smooth.
- Top the Slice with Chocolate: Drizzle the melted chocolate over the Earl Grey filling, then use a spatula to spread it evenly across the top.
- Chill: Refrigerate the slice for at least 3-4 hours, or until the filling is firm and the chocolate topping is set.
- Serve: Once chilled and set, slice into squares or bars. Enjoy this aromatic and creamy tea-infused slice!
Notes
- Use digestive biscuits or any plain biscuit as a base for a crunchy texture.
- Optional sugar in the base can be adjusted or omitted based on sweetness preference.
- Allow the Earl Grey cream to cool before mixing with cream cheese to avoid curdling.
- Chill the slice well to ensure firm setting and easy slicing.
- Substitute dark chocolate chips with milk chocolate for a sweeter topping if desired.
