Description

This flavorful One Pan Cajun Lime Chicken recipe features tender, juicy chicken breasts coated in a zesty Cajun and lime spice blend, cooked quickly on the stovetop with vibrant bell peppers and onions. The dish is balanced with a hint of honey, making it a perfect easy weeknight dinner that’s both gluten-free and high in protein.

Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice and zest of 1 lime
  • 1 tablespoon honey

Vegetables and Garnish

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. Prepare the spice mix and chicken: In a small bowl, combine Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Pat the chicken breasts dry with a paper towel and rub them evenly with the prepared spice mixture.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5–6 minutes on each side, or until the chicken is golden brown and fully cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté the vegetables: In the same skillet, add the sliced red and green bell peppers along with the sliced red onion. Cook for 3–4 minutes, stirring occasionally, until the vegetables are tender but still crisp.
  4. Add lime and honey: Stir in the lime juice, lime zest, and honey into the vegetables, scraping up any browned bits stuck to the bottom of the pan to capture all the flavors.
  5. Combine chicken and sauce: Return the chicken breasts to the skillet and gently toss them in the sauce and vegetables to coat them thoroughly. Cook for an additional minute to warm through and meld the flavors.
  6. Garnish and serve: Sprinkle chopped fresh cilantro over the dish before serving to add a fresh herbal note.

Notes

  • For enhanced flavor, marinate the chicken in the Cajun seasoning and lime juice mixture for at least 30 minutes before cooking.
  • Serve the dish alongside rice, quinoa, or roasted potatoes for a complete and satisfying meal.
  • Adjust the amount of Cajun seasoning to suit your preferred spice level.
