Description

This Overnight Taco Pasta is a delicious and convenient make-ahead meal that combines the flavors of tacos with cheesy pasta in a comforting casserole. Perfect for busy weeknights or potlucks!

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 packet taco seasoning (1 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 cup salsa
  • 2 cups beef broth
  • Salt and pepper to taste

Additional Ingredients:

  • 8 ounces uncooked rotini pasta
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup chopped green onions


Instructions

  1. Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  2. Prepare Mixture: Stir in taco seasoning, diced tomatoes with green chilies, salsa, and beef broth. Bring to a simmer, then remove from heat.
  3. Add Pasta: Stir in the uncooked pasta until well coated. Transfer to a baking dish, cover, and refrigerate overnight.
  4. Bake: Preheat oven to 350°F (175°C). Stir the mixture, cover with foil, and bake for 30 minutes. Remove foil, add cheddar cheese, and bake uncovered for 10–15 minutes.
  5. Serve: Let cool slightly, then stir in sour cream and top with green onions before serving.

Notes

  • You can use ground turkey or chicken instead of beef.
  • For extra heat, use hot salsa or add cayenne.
  • This dish reheats well and can be made ahead up to 2 days.
