Ground Beef Mixture:
- 1 pound ground beef
- 1 packet taco seasoning (1 oz)
- 1 can diced tomatoes with green chilies (10 oz)
- 1 cup salsa
- 2 cups beef broth
- Salt and pepper to taste
Additional Ingredients:
- 8 ounces uncooked rotini pasta
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup chopped green onions
Instructions
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
- Prepare Mixture: Stir in taco seasoning, diced tomatoes with green chilies, salsa, and beef broth. Bring to a simmer, then remove from heat.
- Add Pasta: Stir in the uncooked pasta until well coated. Transfer to a baking dish, cover, and refrigerate overnight.
- Bake: Preheat oven to 350°F (175°C). Stir the mixture, cover with foil, and bake for 30 minutes. Remove foil, add cheddar cheese, and bake uncovered for 10–15 minutes.
- Serve: Let cool slightly, then stir in sour cream and top with green onions before serving.
Notes
- You can use ground turkey or chicken instead of beef.
- For extra heat, use hot salsa or add cayenne.
- This dish reheats well and can be made ahead up to 2 days.
