Description

Delicious and nutritious no-bake Peanut Butter Oatmeal Bars combining creamy peanut butter, honey, and oats for a perfectly chewy and satisfying snack. These bars are easy to prepare, gluten-free with certified oats, and customizable with chocolate chips or dried fruits.

Ingredients

Scale

Main Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 1/2 cups old-fashioned rolled oats
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips (optional)

Instructions

  1. Prepare the Baking Dish: Line an 8×8-inch baking dish with parchment paper to prevent sticking and facilitate easy removal of the bars.
  2. Mix Wet Ingredients: In a large bowl, combine the creamy peanut butter, honey or maple syrup, melted coconut oil, and vanilla extract. Stir until the mixture is smooth and fully blended.
  3. Add Dry Ingredients: Stir in the old-fashioned rolled oats and salt until everything is well combined and evenly mixed throughout the batter.
  4. Add Optional Ingredients: If desired, gently fold in the mini chocolate chips to add a touch of sweetness and texture to the bars.
  5. Press Into Dish: Transfer the mixture into the prepared baking dish. Use a spatula or your hands to press it firmly and evenly, smoothing the top for a nice finish.
  6. Chill the Bars: Place the dish in the refrigerator and chill for at least 1 hour, allowing the bars to firm up and hold together.
  7. Cut and Store: Once set, remove from the fridge and cut into 12 equal bars. Store the bars in an airtight container to maintain freshness.

Notes

  • You can substitute almond butter or sunflower seed butter to make a peanut-free version.
  • For a firmer texture, freeze the bars for 30 minutes before slicing.
  • Mini chocolate chips can be replaced with dried fruit or chopped nuts to vary the flavor.
