Instructions

  1. Sauté aromatics: In a medium saucepan over medium heat, add the neutral oil, chopped onion, and garlic. Sauté for 3–4 minutes until fragrant and slightly softened to develop their flavors.
  2. Add fruits and peppers: Stir in the chopped pineapple and prepared habanero peppers, cooking for another 3–5 minutes to soften and meld the ingredients together, stirring occasionally to prevent sticking.
  3. Add liquids and seasonings: Pour in apple cider vinegar, water, lime juice, honey if using, and sprinkle salt over the mixture. Bring the sauce to a gentle boil to combine the flavors.
  4. Simmer: Reduce heat to low and simmer the sauce for 10 minutes, allowing everything to soften fully and the flavors to deepen.
