Instructions

  2. Mix wet ingredients: In a large bowl, whisk together the natural peanut butter, honey (or maple syrup), vanilla extract, and eggs until the mixture is smooth and fully combined.
  3. Add dry ingredients: Stir in the chocolate protein powder, oat flour, baking soda, and salt until a thick dough forms. Make sure everything is well incorporated without overmixing.
  4. Fold in chocolate chips: If using, fold the dark chocolate chips gently into the dough to distribute them evenly.
  5. Shape the cookies: Scoop out heaping tablespoons of dough and roll them into balls. Place them on the prepared baking sheet and flatten each slightly to shape the cookies.
  6. Bake: Bake in the preheated oven for 8–10 minutes, or until the edges appear set while the centers still look slightly underbaked. This ensures a soft texture.
  7. Cool the cookies: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This helps them set and prevents breaking.
