Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Mix wet ingredients: In a large bowl, whisk together the natural peanut butter, honey (or maple syrup), vanilla extract, and eggs until the mixture is smooth and fully combined.
- Add dry ingredients: Stir in the chocolate protein powder, oat flour, baking soda, and salt until a thick dough forms. Make sure everything is well incorporated without overmixing.
- Fold in chocolate chips: If using, fold the dark chocolate chips gently into the dough to distribute them evenly.
- Shape the cookies: Scoop out heaping tablespoons of dough and roll them into balls. Place them on the prepared baking sheet and flatten each slightly to shape the cookies.
