  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup chopped pecans (optional)


Instructions

  1. Prepare Bread: Grease a 9×13-inch baking dish and place the cubed brioche or challah bread evenly inside, ensuring it’s spread out for even soaking.
  2. Make Pumpkin Custard: In a large bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt until the mixture is smooth and fully combined.
  3. Soak Bread: Pour the custard mixture evenly over the bread cubes, pressing down lightly to help the bread absorb the custard. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow deep soaking.
  4. Preheat Oven: When ready to bake, preheat your oven to 350°F (175°C).
