For the Brigadeiros:

- 1 tbsp unsalted butter (plus more for rolling)
- 1/4 cup finely ground pistachios
- 1/2 tsp vanilla extract
- 1/2 cup finely chopped or crushed pistachios (for rolling)
Instructions
- Cook the Brigadeiro Mixture: In a saucepan, combine condensed milk, butter, ground pistachios, and vanilla. Cook over medium-low heat, stirring constantly.
- Thicken the Mixture: Stir for 10–12 minutes until thickened and pulling away from the pan.
- Chill and Roll: Transfer to a greased plate, cool, then chill. Roll into balls, coat with chopped pistachios.
- Serve: Place in mini cups for serving.
Notes
- Store at room temperature for 3 days or refrigerate for up to 1 week.
- For a smoother texture, sift the ground pistachios before cooking.
