Ingredients
Scale
Potatoes
- 2 pounds Yukon gold potatoes (cut into 1-inch pieces)
Seasoning & Sauce
- 3 tablespoons oil (avocado or olive)
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
- 2 cloves garlic (finely minced)
- 1 ½ – 2 teaspoons salt (to taste)
- ½ teaspoon black pepper (to taste)
- ¼ teaspoon paprika
Cheese & Garnish
- ¼ cup + 2 tablespoons Parmesan cheese (grated, divided)
- 1 tablespoon parsley (finely chopped)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough to roast the potatoes to a golden crisp.
- Prep the Potatoes: Cut small Yukon Gold potatoes into quarters or, if using larger potatoes, chop them into 1-inch chunks for even cooking.
- Season the Potatoes: In a large bowl, combine the oil, freshly squeezed lemon juice, lemon zest, finely minced garlic, salt, black pepper, and paprika. Whisk these ingredients well to create a flavorful coating. Add the potatoes to the bowl and toss thoroughly to coat all pieces evenly. Sprinkle ¼ cup of grated Parmesan cheese over the potatoes and toss again to ensure the cheese sticks to the surface.
- Bake in the Oven: Line a baking sheet with parchment paper and spread the coated potatoes out in a single layer. It’s fine if a few overlaps occur, but try to keep them mostly separated for optimal roasting. Bake for 35-40 minutes, flipping the potatoes halfway through cooking to brown them evenly on all sides.
- Serve: Once roasted to a crispy, golden finish, transfer the potatoes to a serving dish. Sprinkle the remaining 2 tablespoons of Parmesan cheese over top, garnish with finely chopped parsley, and serve warm. Enjoy this delicious, zesty roasted side!
Notes
- For best flavor, use freshly grated Parmesan cheese rather than pre-grated varieties.
- You can substitute olive oil with avocado oil for a higher smoke point and a mild flavor.
- Adjust the salt according to your taste preference, especially if using salted Parmesan cheese.
- Turning the potatoes halfway through roasting helps them brown evenly and achieve a crisp texture.
- This recipe pairs wonderfully with grilled meats or as part of a vegetarian meal.
