Bowl Components
- 2 cups cooked white or brown rice

- 1 avocado (sliced)
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime

Instructions
- Preheat and Prepare Salmon: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Mix olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper in a small bowl. Rub this seasoning evenly over both sides of the salmon fillets.
- Bake the Salmon: Place the seasoned salmon on the prepared baking sheet and bake for 12–15 minutes until cooked through and flaky.
- Prepare Bowl Ingredients: While the salmon bakes, cook the rice if not already done, and rinse and drain the black beans. Prepare the corn, halve the cherry tomatoes, slice the avocado, and chop the red onion and fresh cilantro.
- Assemble the Bowls: In each serving bowl, layer the cooked rice, black beans, corn, cherry tomatoes, avocado slices, red onion, and cilantro.
- Add Salmon and Final Touches: Once the salmon is cooked, flake it into chunks and place it on top of each bowl. Squeeze fresh lime juice over the bowls, add a dollop of sour cream or Greek yogurt if desired, and drizzle with hot sauce or salsa to taste.
