Instructions
- Prepare the butternut squash and garlic: Preheat your oven to 400°F (200°C). Peel and cube the butternut squash into approximately 1-inch pieces. Place the squash cubes and whole garlic cloves in a roasting pan or sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat evenly.
- Roast the squash and garlic: Roast in the preheated oven for about 25 minutes or until the squash is tender and lightly caramelized. Toss halfway through to ensure even roasting.
- Season the steak: While the squash is roasting, season the steak generously with salt, pepper, and finely chopped fresh rosemary and thyme leaves. Let it sit at room temperature for 10 minutes to absorb the flavors.
- Cook the steak: Heat 1 tablespoon of olive oil in a heavy skillet or cast-iron pan over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes per side for medium-rare, or longer depending on your preferred doneness. Remove steak from pan and let it rest for 5 minutes before slicing against the grain.
- Assemble the bowls: Divide the roasted butternut squash and garlic cloves among 4 bowls. Slice the rested steak into thin strips and arrange on top. Garnish with additional fresh rosemary and thyme if desired.
