Instructions

  1. Preheat Oven: Set your oven to 415°F (210°C) to prepare for roasting the sweet potatoes.
  2. Prepare Sweet Potatoes: Slice the sweet potato into 1/4 inch rounds. Toss the slices with olive oil and a pinch of salt. Arrange them evenly on a baking sheet and roast for 10-12 minutes until tender and slightly caramelized.
  3. Sauté Aromatics: While the sweet potatoes are roasting, heat ghee or olive oil in a cast iron skillet over medium-high heat. Add the minced garlic and diced onions, sautéing them until fragrant and translucent, about 2-3 minutes.
