Instructions
- Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season them with salt, pepper, and smoked paprika. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: In the same skillet, add the diced onion and cook for about 3-4 minutes until softened. Add the minced garlic and chipotle pepper, cooking for an additional 1 minute until fragrant.
- Toast the Rice: Stir in the rinsed rice and cook it in the skillet for 1-2 minutes, allowing it to toast lightly and absorb flavors.
- Add Liquids and Simmer: Pour in the chicken broth, BBQ sauce, and sprinkle in the ground cumin. Stir to combine all ingredients. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and let it simmer for 15-20 minutes, or until the rice is fully cooked and the liquid has been absorbed.
- Combine Chicken and Melt Cheese: Return the cooked chicken pieces to the skillet and gently stir to combine everything evenly. If using, sprinkle shredded cheddar cheese over the top. Cover again and cook for 2-3 minutes until the cheese has melted.
