  • 8 oz fresh or dried thin egg noodles or yakisoba noodles

Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar

Other:

  • 2 tablespoons vegetable oil

  • 1/2 cup bean sprouts (optional)
  • 1/2 cup shredded carrots (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the noodles: Prepare noodles according to package instructions, drain, and rinse. Toss with sesame oil.
  2. Prepare the sauce: Mix soy sauces, oyster sauce, sesame oil, and sugar in a bowl. Set aside.

  5. Finish dish: Add bean sprouts, carrots, stir-fry briefly. Season and garnish with green onions. Serve hot.

Notes

  • For added protein, consider tossing in cooked shrimp, chicken, or tofu.
  • This dish is best with day-old or well-drained fresh noodles to prevent sogginess.
