Instructions
- Char the Peppers: Place the banana peppers directly over a gas flame or under a broiler, turning every 45-60 seconds until all sides develop blackened spots. This process imparts a smoky flavor. Transfer the peppers to a bowl and cover with a clean towel to steam and cool, making peeling easier.
- Prepare the Peppers: Once cooled, peel off the charred skin, then remove the seeds and stems. Chop the peppers into smaller pieces to facilitate blending.
- Blend the Base Ingredients: Add the chopped peppers, feta cheese, Greek yogurt, and cider vinegar to a food processor. Process until the mixture is fairly smooth but still slightly textured.
- Incorporate Olive Oil: While pulsing the food processor, slowly drizzle in olive oil. Adjust the quantity to achieve your preferred spread consistency, whether thicker or creamier.
- Season: Add salt and pepper to taste and, if desired, sprinkle in red pepper flakes for extra heat. Pulse briefly to combine.
- Chill the Spread: Refrigerate the tyrokafteri for at least one hour to meld the flavors and allow the spread to firm up slightly.
