Description

Tyrokafteri is a traditional Greek spicy feta cheese spread featuring charred banana peppers blended with creamy feta, tangy Greek yogurt, and a hint of cider vinegar. This flavorful and smooth spread is perfect as a dip with toasted pita bread or crackers, offering a mildly spicy kick balanced by rich creaminess.

Ingredients

Scale

Main Ingredients

  • 1-2 banana peppers (depending on desired spiciness, 2 preferred)
  • 1/3 pound high-quality feta cheese
  • 1/3 cup Greek yogurt
  • 2 teaspoons cider vinegar
  • 1-2 tablespoons olive oil
  • Red pepper flakes (optional, to taste)

For Serving

  • Toasted pita bread (one 12-oz package or as desired)
  • Crackers (optional)

Instructions

  1. Char the Peppers: Place the banana peppers directly over a gas flame or under a broiler, turning every 45-60 seconds until all sides develop blackened spots. This process imparts a smoky flavor. Transfer the peppers to a bowl and cover with a clean towel to steam and cool, making peeling easier.
  2. Prepare the Peppers: Once cooled, peel off the charred skin, then remove the seeds and stems. Chop the peppers into smaller pieces to facilitate blending.
  3. Blend the Base Ingredients: Add the chopped peppers, feta cheese, Greek yogurt, and cider vinegar to a food processor. Process until the mixture is fairly smooth but still slightly textured.
  4. Incorporate Olive Oil: While pulsing the food processor, slowly drizzle in olive oil. Adjust the quantity to achieve your preferred spread consistency, whether thicker or creamier.
  5. Season: Add salt and pepper to taste and, if desired, sprinkle in red pepper flakes for extra heat. Pulse briefly to combine.
  6. Chill the Spread: Refrigerate the tyrokafteri for at least one hour to meld the flavors and allow the spread to firm up slightly.
  7. Serve: Enjoy the tyrokafteri chilled or at room temperature with toasted pita bread or crackers for dipping.

Notes

  • Adjust the number of banana peppers to increase or decrease the heat level.
  • Using high-quality feta cheese significantly enhances the flavor.
  • Allowing the peppers to steam covered after charring helps in easy peeling.
  • Tyrokafteri can be stored in the refrigerator for up to 3 days.
  • It’s excellent as a spread on sandwiches or as a condiment alongside grilled meats.
  • Red pepper flakes are optional but add an extra layer of spice.
