- Prepare Ingredients: Let the cream cheese soften at room temperature or microwave it for 20-30 seconds for easier melting. Roughly chop the canned artichokes.
- Heat Olive Oil and Melt Cream Cheese: Warm the olive oil in a skillet over medium heat, then stir in the softened cream cheese until it melts and becomes smooth.
- Sauté Garlic: Add the minced garlic to the skillet and cook for about one minute until fragrant, being careful not to burn it.
- Create Sauce: Pour in the chicken or vegetable broth and stir continuously to make a smooth, creamy sauce base.
- Add Gnocchi and Artichokes: Stir in the potato gnocchi and chopped artichokes thoroughly into the sauce.
- Add Spinach: Place the fresh baby spinach on top of the gnocchi and artichokes without stirring it in immediately.
- Cook Covered: Cover the skillet and allow the mixture to cook for five minutes so the spinach wilts and the gnocchi cooks through.
- Finish with Parmesan: Uncover the pan, stir in the grated parmesan cheese and cook uncovered for another two minutes until the gnocchi is tender and the cheese is melted.
- Season and Serve: Taste and season with salt and pepper as needed. Serve immediately for best flavor and texture.
