Instructions

  1. Prepare the seasoning: In a small bowl, mix together the garlic powder, paprika, salt, and pepper to create a spice blend for seasoning the chicken.
  2. Create chicken pockets: Slice a pocket into the side of each chicken breast carefully without cutting all the way through, creating space for the filling.
  3. Make the filling: In another bowl, combine the chopped spinach, softened cream cheese, shredded mozzarella, grated Parmesan, and minced garlic, mixing until well blended.
  4. Stuff the chicken: Fill each chicken breast pocket with the spinach and cheese mixture. Secure the opening using toothpicks or kitchen twine to prevent the filling from spilling out.
