  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 (10-ounce) packages frozen chopped spinach (thawed and squeezed dry)
  • 4 large eggs
  • 1 cup ricotta cheese
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg


Instructions

  1. Preheat the oven: Preheat the oven to 350°F and lightly grease a 9×9-inch baking dish.
  2. Sauté onion and garlic: In a skillet over medium heat, warm the olive oil and sauté the onion for 4–5 minutes until softened. Add the garlic and cook for another 30 seconds. Transfer to a mixing bowl.
  3. Mix ingredients: Combine cooked onion and garlic with spinach, eggs, ricotta, feta, Parmesan, milk, salt, pepper, and nutmeg. Stir well.
  4. Bake: Pour the mixture into the prepared dish, spread evenly, and bake for 35–40 minutes until set and golden on top.
