Scale
Pudding Mixtures
- 3.9 ounces instant chocolate pudding mix
- 2 cups milk
- 3.9 ounces instant vanilla pudding mix
- 2 cups heavy cream
- ½ teaspoon vanilla extract (or mint extract based on preference)
- Green food coloring, to desired color
Additional Ingredients
- 8 Oreo cookies (or any cream-filled chocolate cookies)
- 8 ounces whipped topping
- Chocolate gold coins (for decoration)
Instructions
- Prepare Chocolate Pudding: Pour 2 cups of milk into a medium bowl and add the chocolate pudding mix. Use a hand mixer to combine the ingredients on low speed for 2 minutes, then refrigerate for 5 minutes to set.
- Prepare Green Vanilla Pudding: In a separate bowl, pour 2 cups of heavy cream and add the vanilla pudding mix. Begin beating at low speed, then gradually increase to high speed until the mixture becomes light and fluffy. Stir in the vanilla extract and green food coloring until you reach the desired shade.
- Assemble the Parfaits: In each of your four serving cups, layer a thick portion of the chocolate pudding, followed by a layer of green vanilla pudding. Next, add a layer of crumbled Oreo cookies, then a layer of whipped topping. Finish with a large dollop of the green vanilla pudding on top.
- Decorate: Garnish each parfait with a chocolate gold coin and sprinkle additional Oreo crumbs over the top.
- Chill and Serve: Refrigerate the assembled parfaits until chilled, then serve cold for a refreshing dessert.
Notes
- The vanilla extract can be swapped for mint extract to enhance the St. Patrick’s Day theme.
- If you prefer, use a different cream-filled chocolate cookie in place of Oreos.
- Adjust the amount of green food coloring incrementally to achieve your preferred color intensity.
- For a lighter option, substitute heavy cream with whipped topping in the vanilla pudding mixture.
- These parfaits can be assembled several hours ahead and stored covered in the refrigerator.
