Beef

Sauce and Vegetables

  • 1 teaspoon fresh ginger, grated
  • 2 cups mixed stir-fry vegetables (bell peppers, snow peas, carrots)
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce

  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or chili sauce (optional)
  • 1/4 cup water
  • 1 tablespoon cornstarch (for slurry, mixed with 2 tablespoons water)

Instructions

  1. Cook Noodles: Prepare the noodles according to package instructions, then drain them well and set aside to keep warm.
  2. Coat Beef: Toss the thinly sliced beef with a pinch of salt, pepper, and 2 tablespoons of cornstarch until evenly coated to help create a crispy exterior when seared.
  3. Sear Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Sear the beef slices in batches for 1 to 2 minutes per side, or until browned on the outside but still tender. Remove the beef from the pan and set aside.
  4. Sauté Aromatics: Add the remaining 1 tablespoon of vegetable oil to the pan and sauté the minced garlic and grated ginger for about 30 seconds until fragrant.
  5. Cook Vegetables: Add the mixed stir-fry vegetables and stir-fry them for 3 to 4 minutes until they are just tender but still crisp.
  6. Make Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sriracha (if using), and 1/4 cup water. Pour this sauce mixture into the pan and bring to a gentle simmer.
  7. Thicken Sauce: Stir in the cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) into the simmering sauce. Cook for 1 to 2 minutes until the sauce thickens and becomes glossy.
  8. Combine Beef and Noodles: Return the seared beef to the pan along with the cooked noodles. Toss everything together thoroughly to coat all ingredients evenly with the sauce and to heat through.
  9. Garnish and Serve: Remove from heat and garnish with sliced green onions and sesame seeds before serving hot.
