- 1/4 cup water
- 1 tablespoon cornstarch (for slurry, mixed with 2 tablespoons water)

Instructions
- Cook Noodles: Prepare the noodles according to package instructions, then drain them well and set aside to keep warm.
- Coat Beef: Toss the thinly sliced beef with a pinch of salt, pepper, and 2 tablespoons of cornstarch until evenly coated to help create a crispy exterior when seared.
- Sear Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Sear the beef slices in batches for 1 to 2 minutes per side, or until browned on the outside but still tender. Remove the beef from the pan and set aside.
- Sauté Aromatics: Add the remaining 1 tablespoon of vegetable oil to the pan and sauté the minced garlic and grated ginger for about 30 seconds until fragrant.
- Cook Vegetables: Add the mixed stir-fry vegetables and stir-fry them for 3 to 4 minutes until they are just tender but still crisp.

- Thicken Sauce: Stir in the cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) into the simmering sauce. Cook for 1 to 2 minutes until the sauce thickens and becomes glossy.
- Combine Beef and Noodles: Return the seared beef to the pan along with the cooked noodles. Toss everything together thoroughly to coat all ingredients evenly with the sauce and to heat through.
- Garnish and Serve: Remove from heat and garnish with sliced green onions and sesame seeds before serving hot.
