Ingredients
Scale
Main Ingredients
- 2 lbs fresh ripe figs
- 1 1/2 cups granulated sugar
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 1/4 cup water
Instructions
- Prepare the Figs: Begin by washing the fresh figs thoroughly under cold water. Remove any stems and cut each fig into quarters to ensure even cooking and release of flavors.
- Combine Ingredients: In a large saucepan, add the quartered figs, granulated sugar, fresh lemon juice, lemon zest, ground cinnamon, vanilla extract, ground nutmeg, and water. Mix gently to combine all flavors.
- Bring to Boil: Place the saucepan over medium heat and gently bring the mixture to a boil, stirring occasionally to fully dissolve the sugar into the fruit mixture.
- Simmer the Jam: Once boiling, reduce the heat to low and allow the mixture to simmer uncovered for 45 minutes to an hour. Stir frequently to prevent sticking or burning and to promote even cooking.
- Crush the Figs: As the mixture softens and thickens, use a potato masher or back of a spoon to crush the figs, blending them well into the liquid for a smooth jam consistency.
- Check Thickness: Test the jam’s thickness by placing a small spoonful onto a chilled plate. If it gels and holds its shape slightly, the jam is ready. If not, continue simmering and retesting every 5 minutes.
- Cool and Jar: When thickened, remove the saucepan from heat and let the jam cool for a few minutes. Transfer it carefully into sterilized jars, leaving about 1/4 inch of headspace.
- Seal and Process: Seal the jars with sterilized lids. For extended shelf life, process the sealed jars in a boiling water bath for 10 minutes to ensure preservation and safety.
- Store Properly: Store the cooled jars in a cool, dark place. Once opened, refrigerate and consume the jam within one month for best quality and safety.
Notes
- Use ripe, fresh figs for the best flavor and natural sweetness.
- Ensure jars and lids are properly sterilized to avoid contamination and extend shelf life.
- Adjust sugar to taste for a less sweet or more robust fig flavor.
- Simmer gently and stir frequently to prevent scorching on the bottom of the pan.
- This jam pairs wonderfully with cheese boards, yogurt, or simply spread on warm bread.
