Description

  • 1/3 cup tahini
  • 1/4 cup olive oil or neutral oil
  • 2 large eggs
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup shelled pistachios (chopped)
  • 1 tablespoon sesame seeds (optional, for topping)
  • 2 tablespoons chopped pistachios (for topping)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, combine mashed bananas, tahini, oil, eggs, sugars, and vanilla.
  3. Combine dry ingredients: In another bowl, whisk flour, baking soda, salt, and cinnamon. Add to wet mixture.
  4. Add nuts: Fold in chopped pistachios. Pour batter into pan, top with sesame seeds and extra pistachios.
  5. Bake: Bake for 55–65 minutes until a toothpick comes out clean. Cool before slicing.
