Teriyaki Sauce and Tofu
- 1 cup Soy Vay® Veri Veri Teriyaki® Sauce (plus 1/4 cup for topping)
- 1 package (14 oz) firm tofu
Noodles and Vegetables
- 4 cups cooked rice noodles or spaghetti noodles
- 1 cup sliced carrots
- 1 cup snap peas
- 1 cup pineapple chunks
- 2 green scallions, thinly sliced
Instructions
- Prepare the tofu: Cut the tofu into 1/4-inch slices and place them on paper towels to dry out and drain excess moisture for about 10 minutes. This helps the tofu absorb the marinade better and achieve a firmer texture when cooked.
- Marinate the tofu: Arrange the tofu slices in a shallow dish and pour 1 cup of Teriyaki sauce over them. Cover the dish and refrigerate for 20 to 30 minutes to allow the tofu to soak up the flavors thoroughly.
- Bake the tofu: Preheat the oven to 375°F (190°C). Remove tofu from the marinade and lay the slices in a single layer on a baking sheet. Bake for 30 minutes, flipping the tofu once halfway through the cooking time to ensure even baking and caramelization.
- Assemble the bowls: Divide 1 cup of cooked noodles into each of four serving bowls. Evenly distribute the sliced carrots, snap peas, pineapple chunks, and baked tofu over the noodles. Sprinkle the thinly sliced scallions on top and drizzle each bowl with 1 tablespoon of Soy Vay® Veri Veri Teriyaki® Sauce before serving immediately.
Notes
- Pressing the tofu longer can help remove more moisture for a firmer texture.
- You can substitute rice noodles with spaghetti or any other noodles of your choice.
