Ingredients
Scale
Filling
- 1 cup taco meat (leftovers or freshly prepared using ground beef, turkey, or chicken with taco seasoning)
- 1 cup refried beans
- 1-2 cups grated jack or cheddar cheese
- 1 large avocado (lightly mashed)
Other
- 4 burrito-size flour tortillas (room temperature)
- 2-3 tablespoons salted butter or vegetable oil
Instructions
- Cut the Tortilla: Place a flour tortilla flat on your workspace and cut a single straight line from the center to the edge, pointing the cut line straight down.
- Divide into Quadrants: Mentally divide your tortilla into four quadrants starting to the left of the cut as quadrant 1, moving clockwise around the tortilla.
- Spread the Beans: In quadrant 1, spread about 1/4 cup of refried beans to cover the area evenly.
- Add Taco Meat: In quadrant 2, layer 1/4 cup of taco meat, spreading it in a single thin layer to cover the quadrant fully.
- Place Avocado: In quadrant 3, add 1/4 of the mashed avocado, spreading it lightly.
- Top with Cheese: In quadrant 4, sprinkle between 1/4 to 1/2 cup of grated cheese.
- Begin Folding: Fold quadrant 1 (with beans) up onto quadrant 2, using the beans to help prevent fillings from spilling.
- Continue Folding: Proceed to fold the quesadilla clockwise until it forms a compact triangular shape.
- Melt Butter: Heat a medium saucepan over medium heat and melt a dab of butter or add oil.
- Cook the Quesadilla: Using a spatula, carefully place the folded quesadilla seam side down into the pan—this keeps the cheese on the bottom and helps everything stick together.
- Brown the First Side: Cook over medium or medium-low heat until the quesadilla is golden brown and cheese begins to melt, approximately 3-5 minutes.
- Flip and Add Butter: Add a bit more butter to the pan or spread butter on the top side of the quesadilla before flipping.
- Brown the Other Side: Flip carefully and cook until the second side is golden brown and cheese is fully melted, another 3-5 minutes.
- Repeat: Cook the remaining quesadillas following the same method.
Notes
- Use room temperature tortillas to prevent cracking while folding.
- You can substitute ground turkey or chicken for beef in the taco meat mixture.
- Adjust cheese amount based on preference for cheesiness.
- For crispier quesadillas, cook on medium-low heat to allow cheese to melt thoroughly without burning.
- Serve with salsa, sour cream, or additional avocado slices if desired.
