Sausage & Veggie Topping

  • 1/2 pound andouille sausage, sliced
  • 1/2 cup diced bell pepper (red or green)
  • 1/4 cup diced red onion
  • 1 garlic clove, minced
  • 1/2 teaspoon Cajun seasoning

Cheese & Garnishes

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 1/4 cup ranch dressing
  • 1 tablespoon hot sauce (such as Louisiana or Crystal)
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Preheat and Bake Fries: Preheat the oven to 425°F. Bake the frozen seasoned French fries according to the package instructions until they are golden and crispy.
  2. Cook Sausage: While the fries bake, heat the olive oil in a skillet over medium heat. Add the sliced andouille sausage and cook until browned, about 5 to 7 minutes.
  3. Sauté Vegetables: Add diced bell pepper, red onion, and minced garlic to the skillet with the sausage. Sauté the mixture for 3 to 4 minutes until the vegetables are softened.
  4. Add Cajun Seasoning: Sprinkle the Cajun seasoning over the sausage and vegetable mixture and stir well to coat everything evenly with the spices.
  5. Assemble and Melt Cheese: Once fries are done, transfer them to an oven-safe skillet or casserole dish. Top the fries with the sausage and vegetable mixture.
