Description

Watermelon Honey is a natural, vegan-friendly syrup made by reducing fresh watermelon juice to a thick, honey-like consistency. This simple recipe enhances the watermelon’s natural sweetness with a touch of lemon juice and optional honey, resulting in a delicious condiment perfect for drizzling over pancakes, yogurt, or biscuits.

  • 6 cups fresh watermelon, cubed and seeds removed
  • 1 tablespoon lemon juice
  • 1–2 tablespoons honey (optional, for added sweetness if watermelon isn’t very ripe)


Instructions

  1. Blend Watermelon: Place the watermelon cubes in a blender or food processor and blend until completely smooth.
  2. Strain Juice: Strain the juice through a fine mesh sieve or cheesecloth into a large saucepan to remove pulp. You should get about 4 cups of juice.
  3. Add Lemon Juice: Stir in the lemon juice with the strained watermelon juice.
  4. Simmer Mixture: Bring the mixture to a simmer over medium heat. Reduce the heat to low and continue simmering, stirring occasionally, for 1½ to 2 hours, or until the liquid reduces to a thick syrup with a honey-like consistency. The final yield will be about ½ to ¾ cup.
  5. Cool and Store: Remove from heat and let cool completely. Transfer the watermelon honey to a clean jar or bottle and store in the refrigerator for up to 2 weeks.

Notes

  • Use very ripe, sweet watermelon for the best flavor and natural sweetness.
  • You can adjust the syrup consistency by cooking slightly more or less.
