Llasagna Noodles:
- 9 lasagna noodles
Chicken Filling:
- 2 tablespoons olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 3 cups cooked shredded chicken
White Sauce:
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground nutmeg
- 1 1/2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
Ricotta Mixture:
- 1 container (15 oz) ricotta cheese
- 1 egg
- 1/4 cup chopped fresh parsley
Additional:
- 2 cups fresh spinach (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook Noodles: Cook the lasagna noodles according to package directions, drain, and set aside.
- Sauté Onion and Chicken: Sauté onion in olive oil until soft, add garlic and chicken.
- Make White Sauce: Melt butter, whisk in flour, add milk and broth, season and simmer.
- Layer Ingredients: Assemble layers of noodles, ricotta mixture, chicken, spinach, and sauce.
- Bake: Top with cheese, cover, and bake. Uncover and bake until golden.
- Rest and Serve: Let rest before serving.
Notes
- Use rotisserie chicken for convenience.
- You can substitute cottage cheese for ricotta or add mushrooms for extra depth.
- Make ahead and refrigerate overnight before baking for even better flavor.
