Ingredients
Scale
Brownie Dough
- 1/2 cup unsalted butter, melted
- 1/3 cup packed brown sugar
- 2/3 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened natural cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
Chocolate Chip Cookie Dough
- 2 sticks (1 cup) softened unsalted butter
- 3/4 cup packed light brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 tbsp pure vanilla extract
- 3 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 10 oz bag chocolate chips
Instructions
- Preheat the oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it’s ready for baking the brookies.
- Prepare the brownie dough: In a large mixing bowl, combine the melted butter, cocoa powder, packed brown sugar, and granulated sugar. Add the egg, egg yolk, and vanilla extract and stir until the mixture becomes glossy and well blended.
- Mix dry ingredients for brownies: In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually combine this dry mixture into the brownie batter. Once blended, refrigerate this dough while preparing the cookie dough.
- Create the cookie dough base: Using a stand mixer or hand electric mixer, cream the softened butter with light brown sugar and granulated sugar until smooth and well combined. Add in the eggs and vanilla extract and mix thoroughly.
- Combine cookie dough dry ingredients: In another bowl, sift together flour, salt, and baking soda. Slowly add these dry ingredients to the wet mixture along with the chocolate chips, mixing just until combined without overworking the dough.
- Form the brookies: Use a cookie scoop to take one scoop of brownie dough and one scoop of cookie dough. Roll them together gently and press them down slightly so that half of the cookie dough and half of the brownie dough are visible. Place each formed brookie on a parchment-lined baking sheet.
- Bake: Bake the brookies in the preheated oven for about 10 minutes or until they are set and baked to your liking—edges slightly firm but centers still soft.
- Cool: Allow the brookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This helps them firm up and makes them easier to handle.
Notes
- For best results, do not overmix the doughs to maintain a tender texture.
- You can use a mix of semisweet and milk chocolate chips for varied sweetness.
- Store brookies in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
- Chilling the brownie dough helps maintain structure when forming the brookies.
- Adjust baking time slightly depending on your oven and desired softness.
